Best ever Lemon Swirled Cheesecake
I have baked this cake, for Dad's birthday,I bake him Cheesecakes and he'll not ask for more :-)

before and after baking..




























LEMON-SWIRLED CHEESECAKE
Crust:
2/3 cup all-purpose flour
2 tablespoons sugar
2 tablespoons chilled butter or stick margarine, cut into small
pieces
1 tablespoon ice water
Cooking spray
Filling:
3 (8-ounce) blocks fat-free cream cheese, softened
2 (8-ounce) blocks 1/3-less-fat cream cheese, softened
1-3/4 cups sugar
3 tablespoons all-purpose flour
2-1/2 teaspoons grated lemon rind
2 teaspoons vanilla extract
1/4 teaspoon salt
5 large eggs
1 cup Lemon Curd (see below)

Herb lovers: Try adding 1 tablespoon finely chopped fresh rosemary to the crust. If your
springform pan is made of dark metal, cook the
cheesecake 5 to 10 minutes less.

H O W
1. Preheat oven to 400 degrees.
2. To prepare the crust, lightly spoon flour into a dry measuring cup, and level with a knife. Place
2/3 cup flour and 2 tablespoons sugar in a food processor; pulse 2 times or until combined. Add
chilled butter; pulse 6 times or until mixture resembles coarse meal. With processor on, slowly
pour ice water through food chute, processing just until blended (do not allow dough to form a
ball). Firmly press mixture into bottom of a 9-inch springform pan coated with cooking spray.
Bake at 400 degrees for 10 minutes; cool on a wire rack.
3. Reduce oven temperature to 325 degrees.
4. To prepare the filling, beat cheeses at high speed of a mixer until smooth. Add 1-3/4 cups
sugar and the next 4 ingredients (1-3/4 cups sugar through salt); beat well. Add eggs, 1 at a time,
beating well after each addition.
5. Pour the cheese mixture into prepared pan. Spoon mounds of Lemon Curd over filling, and
swirl together using the tip of a knife. Bake
at 325 degrees for 1 hour and 15 minutes or until cheesecake is almost set. Remove cheesecake
from oven, and cool to room temperature. Cover and chill for at least 8 hours. Yield: 16 servings
* I use 5-9% cheese,which is very common here in Israel+
I use 24cm springform .

Lemon Curd (by Cooking Light YEAR: 2000 ISSUE: May PAGE: 200)

3/4 cup sugar
1 tablespoon grated lemon rind
2 large eggs
2/3 cup fresh lemon juice (about 3 large lemons)
2 tablespoons butter or stick margarine
For a lime-curd variation, substitute lime rind and juice for the lemon rind and juice.

H O W 1. Combine the first 3 ingredients in a saucepan over medium heat, stirring with a whisk. Cook
until sugar dissolves and mixture is light in color (about 3 minutes). Stir in lemon juice and butter;
cook for 5 minutes or until mixture thinly coats the back of a spoon, stirring constantly with a
whisk. Cool. Cover and chill (the mixture will thicken as it cools).

Yield: 1-1/3 cups (serving size: 1 tablespoon).

עוגת גבינה וקארד לימון

החומרים לבצק
שני שליש כוס קמח לבן רגיל
שתי כפות סוכר או אבקת סוכר או סוכר דק
עשרים וחמש גרם חמאה
כף עד שתיים כפות מים קרים

החומרים למלית גבינה
חמש קופסאות גבינה 5 או 9% =קילו ורבע סה"כ
כוס וחצי עד כוס ושלושת רבעי סוכר
שלוש כפות קמח
קליפה מגוררת מלימון אחד
שתי כפיות תמצית וניל איכותית
חמש ביצים גדולות =מס' 1

כוס קארד לימון (הוראות בהמשך),להכין מראש,לאחסן במקרר
:ההכנה
לחמם תנור לחום של 200 מעלות
לערבב הקמח+הסוכר. להוסיף חתיכות חמאה, לערבב ליצירת גרגירים
לצקת לאט את המים הקרים, לערבב לפרורי בצק, לא ללוש לכדור
להדק לתחתית משומנת של תבנית קפיצית בקוטר 24 ס"מ. אני מרפדת בנייר אפייה-מומלץ
לאפות 10 דקות בתנור החם
להוציא מהתנור, לצנן על רשת
להנמיך חום התנור ל- 160 מעלות

:כעת להכין את המלית
לערבב גבינה לבנה. להוסיף סוכר
להוסיף:קמח, קליפת לימון ווניל. לערבב היטב
לטרוף פנימה ביצים, אחת בכל פעם
לצקת מלית גבינה על הבצק האפוי
לצקת למעלה בכפות מקרם הלימון
בעזרת סכין לערבב את קרם הלימון בתנועות סיבוביות
לאפות בחום של 160 מעלות למשך שעה ורבע בדיוק במרכז התנור
לצנן היטב לפני הכנסה למקרר
לכסות ולאחסן במקרר
רצוי להכין את העוגה יום לפני ההגשה

קארד לימון
בסיר קטן לערבב:
שלושת רבעי כוס סוכר
קליפה מגוררת מלימון אחד
שתי ביצים גדולות
לבחוש במטרפת ידנית ללא הפסקה ,לבשל כ- 3 עד 5 דקות
להוסיף: 2/3 כוס מיץ לימון
עשרים וחמש גרם חמאה
להמשיך לבשל עוד כ- 5 דקות או עד שמסמיך
לטרוף כל משך הבישול למניעת יצירת גושים
להסיר מהאש, לצנן
לאחסן במקרר למספר שעות לפני השימוש
הקרם מסמיך עם הקרור

Hello, Chanit. I like your blog. I have two questions: I see photos of your preserved lemons but I can't find the recipe! My neighbor has a tree with miniature lemons and she said I can pick some. I want to try preserving them.
Also, what is caster sugar called in Hebrew, and where can you find it in Israel?
