This dish is green and white and greek..born in kozani, a district of western macedonia, a sort of a flat cake made with leeks, without any dough- Prasopita Kozanis from this cookbook :Greece mediterranean cuisine +more recipes: greek Leek pie

Prasopita Kozanis- Leek pie/Greece mediterranean cuisine מאפה כרישה יווני
6 leeks
100 ml olive oil (i use less oil-only 2-3 TB)
1 bunch dill (i didn't add it)
(2 bay leaves)
50 gr coarse semolina (=1/2 cup)
salt, pepper
3 eggs
100 gr grated gruyere cheese (or kasseri cheese)
2-3 TB dried breadcrumbs
200 gr feta (i use only 150 gr)
1. Trim off the tough green part and root of the leek.slice the white and light green parts into rounds.rinse under running water.
2. In a saucepan , gently fry the leeks for 5 minutes in a little hot oil,add the chopped dill (and bay leave) and stir for 10 minutes over the heat.remove the bay leave (if you use it), add semolina and mix again. season with salt and pepper.
3. Whisk the eggs in a bowl, add to the leek mixture and stir well.
4. Reduce the heat to low and stir in the grated gruyer or kasseri cheese.
5. Sprinkle the bottom of an ovenproof dish(i use 25cm round dish) with the dried breadcrumbs,transfer the leek mixture into the dish.
6. Arrange small cubes of feta over the surface of the dish.Bake in the hot oven -425F (220C) for 30 minutes.serve hot..
