Aharoni's Potato Pie
for the dough :
3 cups AP flour (=420 gr)
200 gr cold butter
2 large eggs
1.5 ts salt
for the filling:
1.5 kg Potatoes ,peeled and sliced thin
40 gr butter
3 cloves garlic ,minced
3 onions, sliced thin
2 TB parsely , chopped
250 ml cream (32-38% fat)
26 cm round baking dish
1 egg for brushing the pie
Make first the dough :
Mix all dough ingredients by hand or with your mixer , add 1-2 TB cold water if needed.slice the dough to 2 parts= 2/3 and 1/3 , flatten each part to a round ball and chill for 1 hour or more.
Make the filling :
Fry the garlic and the onions in the butter,for few minutes (don't let them become even golden)
Add the potatoes and fry for 4-5 minutes. add the salt, pepper, nutmeg and parsely , mix and add 125 ml cream, mix again.
Let the filling cool, outside .
Preheat the oven to 200C .
Roll out the larger dough ball- the 2/3 of the dough thin (whick will be a little larger than your baking dish; put the rolled dough into the dish ,fill with the cooled filling.
Roll the 1/3 part of the dough thin and cover with it the filling. clip the 2 doughs, cut any leftover dough (with the leftover dough I made the small flowers);
Make a small hole in the middle of the pie .Decorate with the leftover dough which you cut nicely ..brush the top with the beaten egg . Bake the Pie in the hot oven for 15 minutes. then lower the heat to 160C and bake for 50 minutes.Boil the leftover cream (125 gr), and when the pie is baked ,pour the cream into the hole
