Everyday Challah (Braided White Bread)

Everyday Challah - So simple , So good !


Challah
For 3 medium sise breads:
6TB oil (not olice oil)
1.5 cups warm water
2ts white sugar
2ts salt
14 gr dry yeast = 4.5ts
1/2 cup warm water
3 eggs (large size)
7-7.5 cups AP flour (1 kilo more or less)

poppy seeds

H O W :
In a mixer bowl mix the oil and 1.5 cups water.
Add sugar and salt.
In a small bowl dissolve the yeast in 1/2 cup warm water,let stand for 5 minutes.
Add the eggs to your mixer bowl .(leaving 1 yolk for brushing the Breads).
Now add the yeast mixture to the mixer bowl, mix well.
Stir in 4 cups flour, mix well and add more 3- 3.5 cups flour.
Turn out on to floured board and knead until smooth.
Place in a large greased bowl. (turn dough in bowl).Cover and allow to rise until doubled in bulk.
Punch down.
Divide the dough into 3 parts.
Divide each part into 3 more parts and braid into 3 (small) loaves.
Place each braided loaf in a loaf pan (or on a large baking sheet).
Mix the reserved egg yolk with 1 TB water and brush loaves with a pastry brush.
Sprinkle with poppy seed.
Allow to rise for another hour.
Bake in 400F (200C) for 40-50 minutes or until the loaves sounds hollow when tapped.

Succot Harvest Challah חלת חג

It's more like a yeast cake , this delightful "Succot Harvest Challah".. !
Very festive,very tasty , very high.. full with fruit, easy to make, do you need more than that ? ..
I've got this recipe by the last Clabber Girl.com newsletter this week,and immediately I knew this Bread will be in my oven- soon, very soon ..[another recipe from the same Newsletter which I hope I'll try is: Pear, Cranberry, & Apple Rolly Polly Biscotti ] ; It was funny making this Challah Bread out from 16 balls , this Challa Bread is now a family favorite ! . And as it was written in the Food Down Under site about this Apple Challa :"This is the perfect cross between a bread and a cake. The bottom of the baked bread becomes caramelized with sugar and apple juices. Leftovers make terrific "apple" French Toast.." . It's true :-)

Ingredients


1 cup warm water
2 tablespoons dry yeast
1/2 cup sugar
1/2 cup oil (or unsalted melted butter) [I use oil]
2 eggs [I use 1 small+1 large egg]2 teaspoons vanilla
2 1/2 teaspoons salt [I add only 1 ts]1/2 teaspoon cinnamon [I didn't add]4 1/2 to 5 cups bread flour [I use AP flour by mistake]
Harvest Fruit Mixture
1 1/2 cups coarsely chopped apples [1 big apple]1/2 cup dried plumped cranberries or cherries
1/2 diced apricots
1/2 cup yellow raisins, plumped and dried
1/2 cup white sugar
1 tablespoon lemon juice [I didn't add]1 teaspoon cinnamon [I add less]
Egg wash and garnish
1 egg - beaten
1 teaspoon sugar

1-2 tablespoons coarse sugar (optional) for sprinkling
Instructions
Generously spray one 5 by 12 inch loaf pan or two 9 by 5 inch loaf pans with non-stick cooking spray. You may also use a 10 inch spring-form pan.
In a large mixing bowl, briskly whisk together the water, yeast and sugar[I add here only 1 TB sugar, and the rest to the dough) . Let stand to allow yeast to swell or dissolve. Briskly stir in the oil (or melted butter), eggs, vanilla, salt and cinnamon. Add most of flour to form a smooth but resilient dough (a soft but elastic bread dough). Add additional flour and knead - 8-10 minutes.
Shape dough into a ball and place in a lightly greased bowl and place this in a plastic bag and seal loosely. Let rise until doubled, about 45 to 60 minutes.
Meanwhile, prepare the fruit by putting all fruit in a bowl and gently tossing with the sugar, lemon juice and cinnamon. Prepare egg wash by whisking together the egg and teaspoon of sugar.
Turn dough out onto a lightly floured board. Roll or pat out into a large round (about 10 inches across). Press in half of the chopped apples. Fold in edges of dough over apples (in any way you can). Roll to flatten with a heavy rolling pin (this flattens the dough so as to offer more of a surface on which to place remaining apples). Pat or press remaining apples on dough. Bring edges of dough over, pressing in apples that may pop out. The idea is to distribute the apples over the dough in a random way.
Let the dough rest five minutes. Then, using a dough cutter or sharp knife, cut into odd shaped chunks - about 16 pieces in all. Lay pieces of apple-filled dough in prepared pan, lining bottom first, and then gently laying remaining pieces on top. Top with any escaped apple pieces.
Whisk egg wash ingredients together. Dab on egg wash as thoroughly and generously as possible (since dough is not a smooth surface, you have to drizzle and dab on the glaze rather than paint it on). Sprinkle with coarse sugar (optional). Place loaf pan(s) inside a large plastic bag to rise. Let rise until doubled or dough is puffy and has almost reached the top of the pan - 45 to 90 minutes.
Preheat oven to 350 F. Place bread in oven.
Bake 40-45 minutes until well browned. If top of bread starts browning too quickly (and bread interior is not done), cover lightly with a sheet of foil to protect top crust.
Cool in pan 10 minutes before removing and cooling on a rack.
You can use almost any apple in this recipe - a combination of tart and sweet is best. If apples are new and thin skinned, you can leave the peels on - the bright red hue bakes up very prettily in the finished loaf.
I also make this bread with a combination of apples and cranberries (whole) or some plumped dried cherries.

בתרגום שלי פה , הכנסתי שינויים קלים מהמתכון המקורי- שנמצא למעלה,שינויים שצצו עם ההכנה של החלה הזו. זה מתכון קל להכנה, היה כייף להכין חלה שאופן הכנתה שונה- כדורים, כדורים , כשהם מלאים כל טוב, חשוב לאפות בתבנית כיכר גדולה מאוד.החלה מזכירה יותר עוגת שמרים משובחת ,רכה ומפנקת. יפה וטעימה בשבילכם או כמתנה לחג , לשבת.. מייד כל הפרטים
:לבצק
כוס מים פושרים
שתי כפות שמרים יבשים
חצי כוס סוכר
חצי כוס שמן או חמאה מומסת , אני שמתי שמן
שתי ביצים
שתי כפיות תמצית וניל
כפית מלח
ארבע וחצי עד 5 כוסות קמח מיוחד ללחם, אני שמתי בטעות קמח רגיל

:למלית הפרי
כוס וחצי תפוח קצוץ גס, אני שמתי תפוח אחד גדול וירוק
חצי כוס חמוציות יבשות
חצי כוס מישמש חלוט, מיובש וקצוץ
חצי כוס צימוקים בהירים, חלוטים ויבשים
חצי כוס סוכר
כף מיץ לימון
כפית קינמון

:לזיגוג
ביצה טרופה עם כפית סוכר
:תבנית נחוצה
לחלה אחת גדולה מאוד- תבנית 30 על 12 ס"מ. לשתי חלות קטנות יותר : שתי תבניות כיכר 12 על 22 ס"מ
.את הבצק ניתן להכין ידנית או במיקסר. אני הכנתי אותו היום ידנית
בקערה קטנה לערבב מים +כף סוכר ,סוכר- מתוך כמות הסוכר לבצק, ושמרים. לערבב להתפיח
להוסיף: יתרת סוכר ,שזה קצת פחות מחצי כוס, שמן, ביצים, וניל, מלח. להוסיף מספיק קמח ליצירת בצק גמיש. אני השתמשתי בקמח רגיל הפעם, גם אתם יכולים
.ללוש את הבצק 8 עד 10 דקות
.ליצור כדור בצק, להניח בקערה משומנת, לכסות ולהתפיח עד שכפול- כשעה
:להכין מלית פרי
לערבב את כל חומרי המלית בקערה
:עיצוב החלה
לאחר תפיחת הבצק ללוש מעט, לשטח לעיגול של כ-25 ס"מ, לשים מעל מחצית חומרי המילוי וללוש אותם פנימה
להוסיף כעת את יתר חומרי המלית, וללוש אותם פנימה. להשאיר מספר כפות מלית בצדלתת לבצק לנח משך 5 דקות
לחלק את הבצק ל- 16 חלקים שווים
.ניתן להשאיר את חלקי הבצק כפי שנחתכו, אני גילגלתי אותם לכדורים
להניח 8 כדורי בצק על תחתית התבנית, המרופדת בנייר אפייה. מעל להניח את 8 הנותרים, לפזר מלית נותרת
למרוח בזיגוג הביצה, לפזר מעט סוכר, לכסות בעדינות ולהניח להתפחה עד שכפול, פחות משעה
לאפות את החלה בתנור מחומם לחום בינוני – 180 מעלות משך כ- 45 דקות. אם החלה משחימה מידיי למעלה, במהלך האפייה- לכסות בנייר כסף
לצנן את החלה בתבנית משך 10 דקות , ואז להוציא, לצנן – ולהתענג ! בתאבון

**חלה של ד"ר אטקר Hefezopf

















I'm sure that the weather in Munich is colder then here, in Israel.we have here very rainy and cold days, I can't warm my self.. ; But : watching Claudia's 'Hefezopf' warm my heart !; I felt I can't hold my self, and I must bake this Bread Now !; The funny thing is that I wasn't sure if Dr.Oetker's yeast pa. is 7 gr?.. and it was too late to ask Claudia. I think my translation for this recipe to English isn't perfect, but I did my best :-)
When I was 11 years old(or more) our next door neighbor , gave my mom a small Booklet, it was an old booklet full with Dr. oetker's cake and cookies recipes, I can remember myself coping all the recipes in German..(because she wanted her Booklrt back); I hope I'll find my copy someday somewhere.. ! We use to bake the sugar cookies , taken from that booklet a lot.. ; You can bake 1 large Bread like Claudia did or 2 like I did...
Dolce's Blog makes me always hungry, or that coming -home- feeling; when you need some sweet to your cup of tea ,this apple cake will be wonderful or try one of her pasta dishes (enlarge her pics! as I did) and more.
Hefezopf 
/Dr Oetker + Dolce
Yeast dough:
250 g whipping cream
500 g AP flour
1 P. dry yeast = 7 gr= 2 ts

80 g sugar (I use only 2 TB sugar)
1 TB Vanilla sugar (I use 1 ts. vanilla ex.)

1 TB lemond peel grated (I didn't add)1/8 ts salt
2 large eggs
1 Egg white
(by mistake I use 1 egg yolk.. )Coating:

1 Egg yolk
1 TB milk

Yeast dough:
Warm the cream in a small pot .Mix Flour + dry yeast .Add all ing. and mix to a dough(In your mixer), knead for 5 minutes (with your mixer help..) . Cover and let the dough rise in a warm place until double. (75 minutes)
Preheat your oven to 350F (180C)and grease a large baking sheet . Knead the dough , take 2/3 of the dough and divide
into 3 parts,roll each one about 40 cm long roll ;Make a Zopf - twist and put on the baking sheet .

from the remain dough make a smaller twist- (35cm each roll) and put above the large one.
Mix egg yolk with milk and to brush your twist (the large one+the small one..)
Let rise in a warm place until double . (75 minutes in winter)
Baking: bake in a preheated oven to 350F (180C ) about 35 minutes.

[ Tip:For a Rosinenzopf knead in 200 g raisins, or less.. ]

חלה של ד"ר אטקר
מאתיים וחמישים גרם שמנת מתוקה מחוממת לפושר + 2 ביצים וגם חלבון אחד, שתי כפות סוכר לבן או 80 גרם סוכר לחלה מתוקה, קורט מלח, כפית תמצית וניל, 500 גרם קמח לבן רגיל מעורב עם 7 גרם שמרים יבשים=2 כפיות מדידה גדושות- או פי 3 שמרים טריים
ליצירת חלה מתוקה להוסיף גרידת לימון וצימוקים. ללוש בצק מכל החומרים
לערבב הכל במיקסר, לישה של 5 דקות לפחות גם במיקסר תהיה מצויינת גם
להתפיח לכפול-בחורף מעל שעה. ליצור חלה להתפיח לכפול, לפחות שעה ויותר. להבריש בחלמון מעורב בכף חלב
לאפות בחום בינוני 180 מעלות כ -שלושים וחמש דקות
ליצירת חלת קומות-לחלק את הבצק לשני שליש ושליש וכל חלק לחלק ל-3 ולקלוע לצמה. לחלת הקומות אורך כל גליל של הצמה הגדולה= יהיה 40 סנטימטר ושל החלה הקטנה 35 סנטימטר בלבד. לאחר כ- 10 דקות בתנור מתחילים להרגיש ריח טוב בכל הבית

Challah - The Braided Sabbath Bread-Claudia Roden חלה

Only 2 Breads were baked this Time ...

































Make your own challah/round or braided/By Claudia Roden
Makes 4 Loaves
· 2 tablespoons dry yeast
· 2¼ cups (500 ml) lukewarm water
· ½ cup (100g) sugar
· 4 eggs, beaten, plus 2 yolks or 1 whole egg for glazing
· 1 tablespoon salt
· ½ cup (125 ml) vegetable oil
· About 9 ¼ cups (1 1/3 kg) flour
· Poppy or sesame seeds (optional)
H O W
Dissolve the yeast in the water with 1 teaspoon of the sugar. Beat well and leave 10 minutes, until it froths.
In a very large bowl, lightly beat the eggs... Full Recipe

Then add the salt, sugar, and oil and beat again. Add the frothy yeast mixture and beat well. Now add the flour gradually, and just enough to make a soft dough that holds together, mixing well, first with a large spoon, then working it in with your hands. Knead vigorously for about 15 minutes, until it is very smooth and elastic, adding flour if the dough is too sticky. Pour a little oil in the bowl and turn the dough, so that it is greased all over. Cover the bowl with plastic wrap and put it in a warm place to rise for 2‑3 hours, or until it has doubled in bulk. Punch the dough down and knead again, then divide into four pieces to make 4 loaves.
To make round challah: Take 1 piece of dough, roll it between your palms, and pull it out into a long fat rope about 18 inches (46 cm) long and 2 inches (5 cm) thick—a little fatter at one end. Take the fatter end and put it in the middle of an oiled baking sheet, then coil the rest of the rope around it like a snail. Continue with the remaining 3 pieces.
To make braided challah with 3 strands: Divide 1 piece of the dough into 3. Roll each piece between your palms and pull into long thin ropes about 18 inches (46 cm) long and 1¼ inches (3 cm) wide. Pinch 1 end of all the strands together and plait them: bring the rope on the right over the middle one, then bring the one on the left over it and continue to the end. Pinch the ends together and tuck them under the loaf. You may find it, easier to begin plaiting in the middle of the 3 strands and plait towards the 2 ends. Continue with the remaining 3 pieces.
Place the 4 loaves on well‑oiled baking sheets, leaving plenty of room for them to expand, then leave to rise for 1 hour, or until doubled in bulk. Now brush gently with the beaten egg yolks or if you want to sprinkle with poppy or sesame seeds, brush first with the whole beaten egg (the seeds stick better if the white is there too). Bake in a preheated 350° F (180°C) oven for 30‑40 minutes or until the loaves are beautifully golden-brown. They are done if they sound hollow when you tap the bottoms.
Variations for Sweet Challahs:
Add ½ cup (125 ml) honey to the beaten eggs.
Add ¾ cup (100 g) raisins and knead them into the dough after it has risen and been punched down.

חלה נפלאה ומומלצת
חלה - מתכון של קלודיה רודן
הכמות:4 חלות
החומרים
שתי כפות שמרים יבשים
חמש מאות מ"ל מים חמימים
מאה גרם סוכר
ארבע ביצים טרופות
כף מלח
מאה עשרים וחמש גרם שמן קנולה
קילו ושלוש מאות גרם קמח לבן רגיל
גרגירי פרג שלם ו/או שומשום לזריה

ההכנה
להמיס את השמרים במים עם כפית סוכר
לטרוף היטב ולהניח ל – 10 דקות,עד שתופח ומבעבע
בקערהגדולה מאוד,לטרוף ביצים
להוסיף מלח,סוכר ושמן ולטרוף שוב
להוסיף שמרים ("מבעבעים") ולטרוף היטב
להוסיף את הקמח בהדרגה, עד לקבל בצק רך, בהתחלה לערבב עם כף גדולה ,אח"כ לערבב בידיים
ללוש את הבצק כ – 15 דקות, עד שחלק וגמיש מאוד
ניתן לבזוק עוד מעט קמח אם דרוש
להניח בקערה משומנת, להתפיח עד שכפול, בין שעה לשעתיים (התפחתי שעה וחצי
אחרי התפיחה, ללוש את הבצק מעט ל'הוצאת האויר',לחלק ל – 4 חלקים

:ליצירת חלות עגולות
לגלגל בידיים כל רבע בצק לגליל באורך 46 ס"מ, עובי 5 ס"מ
להניח על תבנית אפיה ולגלגל כמו שבלול (כספירלה), להמשיך כך עם יתר הבצק
:ליצירת חלות קלועות
.לחלק כל רבע בצק ל- 3 חלקים
לגלגל כל "חבל" לאורך 46 ס"מ, עובי 3 ס"מ. לקלוע 3 חבלים לצמה. להמשיך כך עם יתרת הבצק

אפייה
להניח חלות על תבניות מרופדות בנייר אפייה, במרחק אחת מהשנייה
2אני אפיתי 2 חלות בתבנית הגדולה של התנור
לכסות ולהתפיח שעה או עד שהכפיל נפחו
בנתיים לחמם תנור ל – 180 מעלות
למרוח את החלות בביצה טרופה/חלמון ולזרות פרג ר/או שומשום
לאפות בתנור החם 30-40 דקות, עד ששחום ויפה
ניתן לגוון ע"י הוספת צימוקים ממש לפני עיצוב הסופי של הבצק,ליצירת חלה מתוקה
הערה

השתמשתי ב- 2 שקיקים של שמרים יבשים של "דגן", משקל כל שקיק 11 גרם. תופח יפה מאוד
