Meringue Spice Cake












Meringue Spice Cake
3/4 cup shortening(I use butter) 2 cups brown sugar(I use 1 3/4)
2 beaten egg yolks
2 1/3 cups flour
1/2 ts salt
1 ts baking powder
1 ts cinnamon
1 ts cloves(I use 1/4 ts)
1ts baking soda in 1 1/4 cups buttermilk (I use yoghurt with water)
1 ts vanilla
Cream butter+sugar. Add egg yolks and beat until fluffy.
Sift dry ingedients together;add to creamed mixture alternately with milk, beating after each addition. Add vanilla. Pour into a pan =13X12X2 (or 13X9 as I did..)
MERINGUE:
1 cup brown sugar (or 2/3 cup)
2 egg whites
1/2 cup chopped nuts (I didn't add them)
Beat egg whites; add sugar gradually as in other meringues.. spread over batter. Bake at 325F about 50 minutes. [Cover with nuts]
Cut in squares to serve.
