Spoon Bread - Pepperidge Farm Cookbook

Pepperidge Farm Recipes :
"Serve at once with plenty of butter "
This is my First 'spoon bread' , and I was realy hungry during those moments ..
It's very soft inside, with a light and crisp crust.. eat this 'Bread' hot or very warm.
This is my comfort food for this evening.. !
It's like a souffle So you have to eat it quickly :-)





Spoon Bread - The recipe:
Preheat oven to 425F(218C)
4 cups milk
1 cup cornmeal
2 TB butter (=30 gr)
1 ts salt (or 1 1/4)
4 eggs, well beaten
2 TB white flour

Scald the milk.
Mix the flour with the cornmeal.
Gradually stir in the cornmeal and flour mixture and cook until it has the consistency of mush. Add the butter and salt , add gradually the well- beaten eggs, stir well.
Pour into an oiled 1 1/2 quart casserole.
Bake in a hot oven (425F), for 45 minutes (I baked it for 35 minutes ..)

Apple Cake עוגת תפוחים

Based on the recipe from the Pepperidge Farm Cookbook/Margaret Rukin  
It's night here, nothing sweet was left,thinking of a NEW recipe to bake.. But which one?
So.. I remembered this Old Cookbook, the Pepperidge Farm Cookbook, I Love this book, I turn all the pages.. until I've stoped by this Apple cake recipe , the original recipe is for 2 cakes.. so I want only one..
I came to mom tonight, with a very big piece of this cake, and I told her- this cake.. is 'very knap' - this 'strange'.. word is a common phrase in our family, which means :less. For example, a low fat + low sugar cake , I think mom and dad love cake like this one ..[Is this a Yiddish word, mom..?], this word is used with Food , only..
So this cake is low.. not too sweet.. you can add more sugar for topping, as you like, here is the full recipe:
Makes 1- 8 X12 in cake
Preheat oven to 400F (200c), before cake is ready to bake.
1/4 cup milk
1/4 cup sugar
1/8 ts salt
1/4 stick butter (30 gr)

1/4 cup warm water
7 gr (=2 ts) dry yeast
1 egg ,beaten
2 1/3 cups sifted AP flour

melted butter
1/2 cup sugar
3- 5 medium-size apples
1/2 ts cinnamon

Scald the milk; stir in the salt,butter and 1/4 cup sugar.cool to lukewarm.
Measure the waterinto a large bowl.sprinkle in the yeast; stir until dissolved.
Add the lukewarm milk mixture, the egg and about half of the flour; beat until smooth.
Add enough flour to make a soft dough.
Turn out onto a lightly floured board; knead until smooth and elastic, about 10 minutes.
Place in a greased bowl, cover. let rise in a warm place until doubled, about 1 hour.
Punch down.
Turn out onto a lightly floured boared, roll into an 8 by 12 inch rectangle, press into a pan - 13 X 9 inch.
Brush with melted butter (1 oz=30 gr), sprinkle with 1 TB sugar.
Peel, core and slice the apples, press apple slices into the dough,sharp edges down.
Mix 1/2 cup sugar + the cinnamon; sprinkle the top of the cake, cover.
Let rise, until doubled, about 45 minutes.
Bake in the hot oven (preheated)- 400F (200c), for 35- 40 minutes.
Remove from pan; cool on wire rack.

Olive Rolls from Cyprus לחמניות זיתים מקפריסין

Ok..after eating half roll (they are realy very big), I can tell you - Eliotes(thanks to avital) has a nice name.. and are realy tasty.
I like the wholemeal flour addition , It's more healthy and It gives a fine texture to those rolls.
Next time .. [yes, there will be next time!) I'll add the herbs and more olives [Even kalamata olives are uncommon here , don't ask me why:-( ]






























Makes 8 rolls
2 1/2 ts dried active yeast
300 ml warmed water
1 ts sugar (caster sugar)
500 gr strong white flour
125 gr wholemeal flour
1 ts each dried mint & oregano (I didn't add them..)
1 1/2 ts sea salt + extra to sprinkle
3 TB extra virgin olive oil +extra to drizzle
175 gr kalamata olives,pitted [I didn't have kalamata olives :-( ]
H O W
1.Dissolve the yeast in the warmed water,stir in sugar and leave to froth in a warm place for 10 minutes.
2. Sift the flour into the bowl of a mixer,stir in the herbs and salt. gradually work in the frothed yeast mixture and oil to form a soft dough, adding a little extra warm water, if necessary. knead for 8-10 minutes until the dough is smooth and elastic.
3. Finely chop 25 gr of the pitted olives and slice the rest.(I didn't do this ..), transfer the dough to a lightly floured surface and work in the chopped olives . shape into a ball,place in an oiled bowl,cover and leave to rise for 1 hour until doubled in size.
4. Knock back the dough, divide into 8 and shape each one into a flat round.
place a spoonful of the remaining olives in the center of the dough,pull up and pinch the edges together to seal and shape into rolls.
5. Place the rolls seam side down on a baking sheet, cover and leave for 35-45 minutes (1 hour..), until doubled in size.drizzle the rolls with a little oil,sprinkle over some sea salt and bake in a preheated oven- 220C (425F), for 20-25 minutes, until risen and golden.cool on a wire rack.







 

Yes, It's right - I didnt add all the olives amount, that's the reason It's hardly seen.. but these rolls are very tasty with few olives in.. ! :-)

Fougasse




My Fougasse isn't flat or ronde or like Fougasse (Pierre), but in 10 or 20 minutes I'll slice this Bread and we'll see...just wait.. :-) Ok.. I'm back: This Bread is rich in flavor and Very rich in smell ( buttery smell ) and Realy very tasty ! Oh, I'm very happy !
7 gr dried yeast (=2 ts)
1 ts sugar
3 cups plain flour
1 cup wholmeal plain flour
1 ts salt
water
1.Mix the yeast,sugar and 1/2 cup (=125 ml) of warm water in a bowl.cover and set aside in a warm place for 10 minutes, or until foamy.
2.Sift the flours and salt, make a well in the center. (I did this in the Mixer bowl), pour in 1 cup (=250 ml) of extra warm water and the foamy yeast. mix to a soft dough and gather into a ball.knead for 10 minutes or until smooth (by mixer..)
3.Place in a large, lightly oiled bowl,cover , and leave in a warm place for 1 hour, or until doubled in size.
4. Punch down the dough and knead for 1 minute. press into a large, oval shape 2 cm thick. Lay on a large, floured baking tray, cover and leave to rise for 20 minutes (I gave it more time to rise..)
Preheat the oven to 210C (415F).
5.Bake for 35 minutes, or until crisp (after 15 minutes spray with water to make the crust crispy- I didn't do this..)
