Banana Cranberry Loaf and more


Onion Buns/Soups and Breads-Family Circle step-by-step
7 gr dried yeast
1 ts sugar
1 TB olive oil
2 onions,fienely chopped
500 gr plain flour
2 ts salt
1 egg, beaten
1 TB sesame seed
1.Mix the yeast,sugar and 1/2 cup of warm water.cover and set aside for 10 minutes, or until frothy.Heat the oil in a frying pan and cook the onion until golden.
2.Sift the flour and salt into a bowl.stir in the onion and make a well in the center.pour in 1 cup of warm water and the yeast.mix to a soft dough and knead for 10 minutes.put in an oiled bowl,cover and leave for 1 hour, or untildoubled.grease 12 - 1/2 cup capacity muffin tins.
3. Pounch down the dough,turn out onto a floured surface and knead for 1 minute.divide the dough into 12 portions and shape each into a ball.place in the tin,cover,and set aside in a warm place for 30 minutes or until well risen.preheat the oven to 350F (180c). brush the buns with the egg and sprinkle with sesame seeds.bake for 30 minutes or until crusty.

Banana Cranberry Loaf
175 gr self raising flour
1/2 ts baking powder
150 gr soft brown sugar
2 bananas, mashed
50 gr chopped mixed peel
25 gr chopped nuts
50 gr dried canberries
5-6 TB orange juice
2 eggs, beaten
150 ml oil

1. Grease 900 gr loaf pan,line with baking parchment
2.Sieve the flour and baking powder, into a mixing bowl.stir in the sugar, bananas, mixed peel and cranberries .
3. Stir the orange juice+eggs+oil together. add the mixture to the dry ingredients and mix until well blended.pour the mixture into the prepared tin.
4. Bake in a preheated oven 350F (108C),for about 1 hour or until done.

i still have the "peanuts" cookbook that i bought when i was in grade 3!! i think that was the first cookbook i ever bought! now it's old and falling apart but i still have it. there were some good things to make from that little book.
