The 2009 is here ! ; It's a cold day in Israel (it's a war in part of Israel these days) :-(
I want to start this year with a realy great wish for a better year, better then ever ,and what about a low sugar jam ? . Not too sweet, very easy to make ,pink-golden and fine as a cake filling too .

Baked Quince and Apple Jam - ריבת חבושים ותפוח-מתכון בעברית
700g quinces, peeled and cut in 5mm slices
400g apples, peeled and cut in 5mm slices
grated zest of 1-3 lemons
100g light palm sugar
20ml corn oil
H o w :
1.Preheat the oven to 160c
2.Toss the cut fruit with the lemon zest,palm sugar and oil and put into ovenproof casserole.
3.Cover and cook in the oven for 40 minutes.
4.Remove the lid and cook for 30-40 minutes or until the liquid has reduced to a sticky syrup and the fruit is pink and golden.
5.Store in a clean jar in the refrigerator.
6.Serve withtoasted wholemeal or walnut bread ..
