Chocolate Yeast Roses Cake שושני שמרים של רשליקה
This Cake is like my grandmother's cake !!
..or Rashelika - Part II..(here is part I) רשליקה- חלק שני
I can't forget my beloved Grandma's chocolate 'Rosen Kuchen' , made with a wonderful yeast dough.. filled with chocolate filling (my grandma didn't use Nutella at all. only a butter-cocoa-sugar mixture for a rich filling).Grandma ,Dora's cake ,was very tall,SO tall that the cake filled almost her whole old Israeli wonder-top,with a lid, which was 'baked' on the stove,not in a real oven .The cake was soft,with a wonderful aroma.All grandchildren [yes, me too ! :-)]couldn't wait till the cake was getting cold..Oh those days, so many years ago.
Looking again into Rashelika's Cookbook, I found that cake recipe...so close to grandma's cake (no recipe was left), the cake is really So good !, Here comes Rashelika's cake recipe .
Chocolate Yeast Roses Cake
For the Dough:
6 cups AP flour (= 840gr)
3 TB sugar
1 ts vanilla
3 eggs + 1 egg yolk
200 gr butter, softened
250 ml whipping cream or 1 cup water
For the yeast mixture:
50 gr fresh yeast (or 17 gr dry yeast)
1/4 ts sugar
1/4 cup water
1 TB flour
Filling: I use the Nutella as my chocolate filling.350-400 gr Nutella [OR a mixture of: 200 gr butter,6 TB cocoa,1 cup sugar,1 egg white/ OR a Cheese filling made of:
500gr white dry cheese,1 egg,1 cup sugar]

Glazing:1 egg yolk mixed with 1 TB water and 1 TB sugar .(I didn't glaze my cake)
1 large Tube baking dish lined with baking paper
How:
Make first the yeast mixture ,by mixing the yeast,1/4 ts sugar,1/4 cup water and 1 TB flour.
let rise for 10 minutes.In your mixer bowl mix all dough ingredients , adding the risen yeast mixture.Knead the dough until it becomes soft and homogeneous .Let the dough rest for 10 minutes.Knead again for 1 minute.Cover and let the dough rise now for 30 minutes.
Shaping the dough like roses:Knead and cut the dough to 4 parts ; Roll each part to a rectangle 1/2in thickness ; Spread with your filling (I use the Nutella as my chocolate filling), roll and cut to 8 slices.make the first layer in your baking dish by putting these 8 slices on the bottom ; Repeat with the other 2 parts .In the second and in the third layer put every slice between 2 others (in the empty space )for a nicer shape. ( The fourth part can be baked in a separate long baking dish as 1 layer only).
Brush with the egg yolk (mixed with water and sugar).Now preheat the oven to 400F (200c), let the cake rise for 30 minutes until your oven becomes hot and ready for baking.
Bake the cake for 35 minutes, until golden brown. (you can pour a watery sugar- water glazing on the hot cake)
9.8.07 update: above cake dough was made with 250ml cream ,I'm going to try this dough one more time now, with 1 cup of water instead the cream(+vanilla sugar and butter filling)..I'll tell you later how it comes out.....Few hours later- here are the 2 cakes, I think they look nicer .. (I'm in love.. with this dough) :-)
