Apple cake
4 cups (=480 gr) all-purpose flour
1/2 ts salt
150 gr cold butter,cut in small pieces
About 2/3 cup (150 ml)very cold water (ice water,if you have)
2 kg (4 lbs) cooking apples
juice of 1 lemon
3/4 cup (or more) suger
1 ts cinnamon
2/3 cup (100 gr)raisins
1 cup (100 gr)chopped nuts (any kind you like)
1 egg yolk, beaten
First make pastry
sift flour and salt into a large bowl.
cut in the butter,in small pieces.
Lightly mix in suger and enough ice water,to make a dough.
press into a ball, warp in plastic warp.
Refrigerate 1 hour.
Now make filling
Peel and core apples.
chop apples coarsely; place in a large bowl.
mix in lemon juice,suger,cinnamon,raisins and nuts .
preheat oven to 205C (400 F).
On a floured surface,roll out three-fourths (3/4) of dough to fit a 39x27 cm(15.5x10.5inch)-the oven cake dough in pan.spread apple mixture over pastry shell.
roll out remaining dough,cut into thin strips and arrange over cake in a lattice pattern.
Brush with egg yolk. Bake 40 minutes.Cool in pan.
