Basic White Bread/ Livebait Restaurant/London




Basic white bread with poppy seeds/the livebait cookbook לחם לבן בסיסי של המסעדה
There are some bread recipes in this Book,from the Livebait restaurant , this is the Basic bread, let's try it today..
1 TB yeast (dry)
1 ts sugar
2 1/2 cups lukewarm water
7 1/2 cups flour (I use AP flour)
1 TB salt

1 egg
2 ts poppy seed

1.Dissolve the yeast with the sugar in a little of the water (I use 1/2 cup of the water for this),
and wait until it is frothy.
2. Mix the flour + salt on a work surface.
3. Make a well in the center of the heap. add the rest of the water to the yeast mixture, draw the flour together by pouring the liquid into the middle, and making a dough by hand. [yes I did it by hand !]
4. Knead for 7-8 minutes... the doughwill no feel sticky.
5. Oil a bowl and put the dough into it, cover and let rise for hour or two (I think 1 hour is good)
6. When the dough has doubled in size, return it to the work surface and knead until you have knocked the puffiness out of it.
7. Form it into 2 long,ovals loaves. put them on a greased baking sheet and set aside to rise for 45 minutes.
8. Preheat your oven to 450F (=230c)
9. When they have risen, paint the tops of the loaves with egg wash (an egg beaten with 1 ts water), and sprinkle with poppy seeds,then make a series of knife cuts across each loaf, on the diagonal and about 3/4 inch deep.
10. Bake in the oven for 35-40 minutes. Bread is cooked when you can tap the bottom with your finger and it sounds hollow.
11. When it is cooked, cool on a rack before slicing.

Marble Pound Cake עוגת שיש
2 ounces bittersweet chocolate, chopped (about 1/2 cup)
2 1/4 cups cake flour
1 1/2 teaspoons baking powder
12 1/2 tablespoons unsalted butter, softened (=180 gr)
3/4cup sugar
1/4 teaspoon salt
5 extra-large eggs, whole and at room temperature

Preheat the oven to 350 F. Coat a 9-by-5-by-3-inch loaf pan lightly with butter or with nonstick cooking spray; set aside.
