Marriage Cookies- Biscotti Sposalizi /Ciao Italia
1 3/4 cups King Arthur™ Unbleached, All-Purpose Flour, sifted
8 tablespoons (1 stick) unsalted butter, softened, or ½ cup solid vegetable shortening
3/4 cup sugar
1/2 teaspoon grated nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
3/4 teaspoon baking soda
1/4 cup unsweetened cocoa
1/4 cup coarsely ground walnuts
1 cup raisins, coarsely chopped
1/2 cup milk
Frosting
1 1/2 cups confectioners’ sugar
2 1/2 tablespoons heavy cream
1 teaspoon unsalted butter or margarine, softened
1 teaspoon rum extract
Colored sprinkles
Preheat the oven to 350° F. Lightly grease two cookie sheets. In a bowl, beat the flour and butter or shortening until well blended. Add the sugar, spices, baking powder, baking soda, cocoa, nuts, and raisins and mix well. Add the milk and mix well to make a soft dough.
Drop teaspoonfuls of the dough onto the cookie sheets, spacing them about 1 inch apart. Bake for 10 minutes, or until firm. Cool on wire racks before frosting. Full recipe


Little Braids -Treccine/Ciao Italia
2 1/2 cups King Arthur™ Unbleached, All-Purpose Flour
1/4 cup plus 1 tablespoon sugar
1/4 teaspoon salt
1/2 cup dry white wine
1/4 cup plus 2 tablespoons Colavita™ extra-virgin olive oil.
2 tablespoons water
About 2/3 cups whole natural almonds
1 egg, slightly beaten
2 tablespoons turbinado (coarse brown) sugar

Preheat the oven to 350°F. Lightly grease two cookie sheets. In a bowl, mix together the flour, sugar, and salt. Add the wine, oil, and water, and mix with a fork until a ball of dough begins to form. Alternatively, make the dough in a food processor; combine the flour, sugar, and salt in the bowl of the processor. Add the wine, oil, and water through the feed tube, pulsing until a dough begins to form.

Homemade Pizza



Pizza Recipe/REAL ITALIAN FOOD by Paul lay
makes 4 pizzas about 25cm
for the dough
7 gr dried yeast
450 gr strong white flour (Iuse bread flour)
300-350 ml warm water
1.Mix the dry ingredients in a bowl (or mixer bowl..), stir in the warm water (not all the water)
2.Make the dough into a ball and place it on a lightly floured surface; knead for 10 minutes until dough is smooth and elastic.
3.Allow to rise for about 1 hour, until nearly doubled.
4. Preheat the oven to 240c (475F)
5. Flatten the dough and divide into 4 balls.
6. Flatten each of the balls into a circle, add your chosen topping... bake for 8-10 minutes until the outer crust is brown. פיצה הנה המתכון-קצר ולעניין
