Jacques Torres's Secret Chocolate Chip Cookies and more.. עוגיות השוקולד הסודיות

No , I didn't use 2 pounds of chocolate ! ..
But 200gr chocolate were good enough.My 'old' habit with new (to me) recipes, is to make half or 1 quarter of the quantity, until I'm sure that recipe is a good choice (or the best one) . Yes and these "Jacques Torres's Secret Chocolate Chip Cookies" are more than just 'a good recipe', it's ONE of the best Chocolate Cookies ever !

Jacques Torres's Secret Chocolate Chip Cookies עוגיות השוקולד הסודיות
1 pound unsalted butter (125 gr)
1 3/4 cups granulated sugar (80 gr)
2 1/4 cups packed light-brown sugar (1/2 cup)
4 large eggs (1 egg)
3 cups plus 2 tablespoons pastry flour (105 gr)
3 cups bread flour (105 gr Ap flour)
1 tablespoon salt (1/2 ts)
2 teaspoons baking powder (1/2 ts)
2 teaspoons baking soda (1/2 ts)
1 tablespoon pure vanilla extract (1 ts)
2 pounds Jacques Torres House (60 percent cocoa) Chocolate or other best-quality semisweet or bittersweet chocolate, coarsely chopped (200 gr )
