I use only half Topping for all 8 flatbreads.. and I bake them for 10 minutes.Go and bake those wonderful Breads :-) ז

- To make the topping: Stir together all the ingredients in a small bowl and set aside.
- To make the bread: Whisk together the yeast, water, and sugar.
- Stir in the oil, the all-purpose flour and most of the bread flour, then the salt. Mix to form a soft dough.
- Knead the dough for 8 to 10 minutes, until it's elastic and supple, adding additional flour as needed.
- Place the dough in a large, well-greased bowl, cover with plastic wrap and a tea towel, and let rise until doubled. Alternatively, allow the dough a long, cool rise in the fridge, several hours or overnight (or up to 3 days). Bring the dough to room temperature before shaping; it'll rise as it warms up.
- Divide the dough into 8 pieces.
- Stretch or roll the pieces into irregular slabs, and let rest for 15 minutes, covered with a tea towel.
- Spread some olive oil/za'atar mixture onto each piece of dough.
- Preheat the grill to its hottest temperature.
- Place the flatbreads gently on the grill. Cover and bake for 1 to 2 minutes, then check for doneness. Allow to bake until the tops begin to brown.
- Brush with additional topping if desired, and remove from the grill.
- Store, wrapped, for 3 days at room temperature, or freeze for up to a month.

אפשר להכין כפול ציפוי זעתר, שיהיה במה לטבול
לתערובת הזעתר
רבע כוס זעתר
רבע כפית מלח גס
מיץ מלימון עסיסי אחד
שליש כוס שמן זית
לבצק
כף שמרים יבשים -או 3 כפות שמרים טריים-שמרית
שתי מים פושרים
שתי כפיות סוכר
שתי שמן זית
שתי כוסות קמח לבן רגיל
ארבע עד חמש כוסות קמח מיוחד ללחם
כפית+שלושת רבעי מלח
ההכנה
לערבב את כל חומרי הציפוי ולשמור בצד
לערבב:שמרים+מים וסוכר. להוסיף שמן,קמחים ומלח (בסוף
ללוש לבצק מוצק וחלק
להמשיך ללוש עוד 8-10 דקות
להתפיח בקערה משומנת עד שכפול (כשעה), לקראת סוף ההתפחה הראשונה- להדליק את התנור ולחם אותו על החום הגבוה ביותר = 250
לחלק הבצק ל - 8 חלקים. לרדד כל אחד לגודל של פיתה ולהניח לרבע שעה מכוסה
למרוח על כל אחד מציפוי הזעתר.(אני עושה קודם טיפה שקע ושוליים, שהציפוי לא יזל לאפות בתנור החם מאוד על המדף העליון ביותר כ- 10 דקות. זה משחים אבל רך בפנים

I just love za'ater ( we call it 'zahter'in Turkish). We just mix it with some olive oil in a small bowl and eat it with bread, just like a dip sauce.
I want to try this bread recipe. Looks great!
I love za'atar Too,your dip isil, 'sounds' good, I'll try it soon.
za'atar is good with cheese too..(labane)

Maybe I couldn't express it well in the 1st post,to make it clear: You just pour some extra virgin olive oil in a small bowl, then add some zahter. That's it (no need to stir or smth)
