Ginger Cookies , Sweet potato fritters, Focaccia

The Sandwich Cookbook is a pocket size book with ideas of making sandwiches.It's was written by Israel Aharoni in 2002 in Hebrew.This book is full with salty or sweet sandwiches - realy yummy,with Nelli Sheffer's photography you get a very nice Book.On the last page of this book I've found a Bread recipe..another Focaccia Dough which is quick to make and bake , even you have No rosemary at all (like me..), I added less water as written, here is the recipe like I did it, It's for a very very large Bread with a wonderful taste !
You can make the dough with your mixer or as I did.. with my 2 hands..

Mix 1 TB dry yeast (or 35 fresh yeast as written in the book)+1 TB sugar+1 cup lukewarm water ,mix for 2 minutes and let this rise for 30 minutes, covered.Now add : 2 TB sugar, 1TB salt, 4TB olive oil, 1 Tb rosemary, 800 gr AP flour and 1 3/4 cups lukewarm water.Mix the dough for about 5 minutes- don't worry :the dough will be very soft and sticky (yes.. very sticky.It's OK) ,remove the dough from your bowl and put it on a large baking dish, in the middle (don't flatten the dough now..), cover and let it rise for 1 hour.
with oiled hands (with olive oil..!) flatten the dough all over the baking dish, let it rise for another 30 minutes. Meanwhile preheat the oven to 220C , make holes in the dough,spinkle with olive oil and Coarse Salt. Bake for 20 minutes ,until brown and you can fell that good smell all around.

Ginger Cookies
/The complete Book of Home Baking-Heilie Pienaar
makes about 40 cookies
200 gr soft butter
200 caster sugar
1 large egg
1 TB milk
4 TB golden syrup or honey
315 gr AP flour
1 TB groun ginger
1 ts bicarbonate soda
1/2 ts ground cinnamon
1/4 ts salt
3 TB granulated sugar for rolling
1. Cream the butter and sugar until light; beat in egg then stir inthe milk and syrup.
2. Sift the flour, ginger, soda, cinnamon and salt together, and add to the butter mixture.mix well.shape the dough into balls and roll them in the granulated sugar .
3. Arrange cookies on baking trays, leaving room for spreading, flatten slightly with a fork.
4.Bake in preheated oben at 350F (180c)for 10-11 minutes; leave to col slightly before transferring to a wire rack to cool.

Very easy to make, soft and creamy, tasty even without any sauce.The original recipe includes a dressing made of sour cream ,mayonnaise, salt , pepper and chives; I think the full recipe is for 6 .
Sweet potato fritters /Orna and Ela
1 kg sweet potato peeled
1/2-1 TB soy sauce
3/4 cup AP flour
1/2 ts salt
Cook the sweet potato in water until soft; drain ,let them cool and mush.
Add soy sauce, flour, salt and pepper,mix well.Fry fritters in butter on low heat, eat hot with or without sauce
