Apple - Coconut muffins the recipe from Denmark

Apple and Coconut muffins
lets call them 'Kokos/æble-muffins' . few months ago 'forglemmigej' ,an Israeli Blogger who lives in Denmark and writes her Blog in Hebrew send me a Denish muffins recipe (this recipe), translated to Hebrew, she wrote me about their wonderful taste ..; As I'm one of her regular readers, and every post of her gives me lot of pleasure, I was sure the recipe she send me is a very good one .So, yesterday I bought a red new Silicone Muffin Pan..( for 12 muffins)and today I decided to use this pan for the first time [I didn't use silicone pans before :-)] .I have silicon now ! :-)
I like to work with this dish, it was very easy and satisfying.I've got 19 small muffins,like a big bite .. moist,low fat anf full with flavor. thank you forglemmigej ! תודה רבה לך,מבטיחה לנסות כל מתכון תוצרת דנמרק

Apple - Coconut muffins the recipe from Denmark:For 12 large muffins or 19 smaller מאפינס קוקוס תפוח
200 gr coconut
2 egg yolk
125 gr sugar
25 gr butter
50 gr almonds, chopped (I use walnuts)
1 apple grated
100 gr raisins
1 cup AP flour
2 ts baking powder
1/2 cup milk
1/2 cup apple juice (I use fresh orange juice)
2 egg whites

H O WPreheat the oven to 345-350F (170-180C).
Beat the egg whites with a pinch of salt, for 3-4 minutes until stiff.
In another bowl beat the egg yolks+sugar and butter.Add all other ingredients and mix gently ;Fold in the beaten egg whites.

Pour the batter into muffins pan -50% full .
bake for 20-25 minutes OR until done.

Lychee .. I've never eat fresh lychees before, it was a popular dessert in China style restaurants here (but not the fresh fruit ) :-)

האמת? רק השנה גיליתי את הליצ'י הטרי. תמיד אכלתי מקופסאות שימורים או במסעדה הסינית. וזה כל כך טעים, והטעם כה עדין
